Dipilto is a small town in the mountainous Nueva Segovia department of Nicaragua, on the northern border with Honduras. The coffee farmers there are very, very small and must pool their cherry to produce enough coffee for export. The best of these farms have their coffee purchased by the Prodecoop coffee mill in Esteli. This mill works with the farmers and combines the cherries from these tiny farms to develop a very typical regional character which is distinct from other Nicaraguan coffees. Dipilto coffee is defined by juicier, brighter notes of acidity with hints of floral and cedar. All coffee has been grown under a variety of shade trees, is washed at the mill and sun dried.
These high grown beans can be used for the full roasting range, from lighter City roasts to dark.
